A club house sandwich, originally, was made of chicken and lettuce under bacon. Taking the first letters of every word, you get “club”. This sandwich is served in triangles. 

This egg club sandwich is very simple to make using about ten ingredients which is typically available in anyone’s pantry.

Whether it’s for lunch, dinner or a light snack, this egg club sandwich will be a family favorite including the kids. It is suitable for vegetarians because it doesn’t contain any meat. For this recipe to be vegan, you can opt to use vegan substitutes of mayo and egg.

There is no known origin of the club or clubhouse sandwich. However, most Americans speculate that first signs of this sandwich was made in Union Club of New York City, which contained an early recipe to a Union Club sandwich. The Union Club Sandwich was made up of two toasted pieces of Graham bread, with a layer of turkey or chicken and ham between them, served warm. It has evolved since then and many versions popped up in many countries.

How to make egg club sandwich

  1. Thinly slice the tomatoes and onion and set aside.
  2. To make the dressing, mix 1/4 cup of mayo, 1/4 cup ketchup and 1/4 cup Athena’s Garlic Infused Olive Oil or Athena’s Pizzolio in a bowl. Add pepper and salt according to you taste.
  3. In another bowl, beat 4 eggs and season with pepper and salt. Take a non-stick oven tray add a few drops of oil and spread evenly. Then transfer the egg mixture into the tray.
  4. Preheat the oven to 180 degrees Celsius for 5 minutes. Put the tray in the oven until the egg is cooked. This should take about 10-15 minutes.
  5. Once cooked, divide the egg into equal portions.
  6. Take a bread toaster and toast 2 sliced of bread at a time.
  7. To assemble the sandwich, set one slice of bread on a plate, spread the dressing evenly, then layer with egg, tomato, onion and dressing. Continue until you’ve used up 4 slices of bread. Cut the sandwich diagonally.
  8. Repeat step 7 for another portion.
