Ingredients
You will need the following ingredients:
- 1/4 cup mayo
- 1/4 cup ketchup
- 1/4 cup Athena’s Garlic Infused Olive Oil or Athena’s Pizzolio
- 8 slices of bread
- 4 medium sized eggs
- pepper
- salt
- 10 pcs of medium sized tomatoes
- 1 medium sized onions
How to make egg club sandwich
- Thinly slice the tomatoes and onion and set aside.
- To make the dressing, mix 1/4 cup of mayo, 1/4 cup ketchup and 1/4 cup Athena’s Garlic Infused Olive Oil or Athena’s Pizzolio in a bowl. Add pepper and salt according to you taste.
- In another bowl, beat 4 eggs and season with pepper and salt. Take a non-stick oven tray add a few drops of oil and spread evenly. Then transfer the egg mixture into the tray.
- Preheat the oven to 180 degrees Celsius for 5 minutes. Put the tray in the oven until the egg is cooked. This should take about 10-15 minutes.
- Once cooked, divide the egg into equal portions.
- Take a bread toaster and toast 2 sliced of bread at a time.
- To assemble the sandwich, set one slice of bread on a plate, spread the dressing evenly, then layer with egg, tomato, onion and dressing. Continue until you’ve used up 4 slices of bread. Cut the sandwich diagonally.
- Repeat step 7 for another portion.
